Dr. Pedre’s Scallion Vinaigrette

Homemade Vinaigrette with Thyme by fresh ingredients

Dr. Pedre’s Homemade Vinaigrette with fresh herbs and apple cider vinegar.  This vinaigrette is great on salads and roasted veggies or used to marinate meats.

Dr. Pedre’s Vinaigrette

Makes 1 cup

1 to 2 small scallions, cut into ⅛-inch slices

⅔ cup cold-pressed extra-virgin olive oil

⅓ cup apple cider vinegar

2 teaspoons fresh lemon juice (about ½ lemon)

½ teaspoon Himalayan sea salt, to taste

¼ teaspoon freshly ground black pepper, to taste

Dried basil or herbes-de-Provence, to taste (optional)

Step 1

Place the scallions in a large measuring cup or mason jar.

Step 2

Using a wooden spoon or a pestle, crush the scallions to release their juices and flavors.

Step 3

Add the remaining ingredients and mix vigorously with a spoon or whisk, or place the lid on the mason jar, if using, and shake vigorously to distribute the ingredients evenly.

Step 4

Serve on salads or use as a dressing on meat dishes.

1 cup frozen blueberries

¼ cup whole Brazil nuts

1 ½ cups filtered water

2 teaspoons chlorella (available in powder form at health-food stores)

1 large handful of organic spinach

One 2-inch piece ginger, peeled and finely grated (about 1 tablespoon)

1 tablespoon coconut oil

¼ cup almond milk (optional)

Step 1

Add the ingredients to a high-speed blender in the order listed.

Step 2

Blend until smooth.

Step 3

Serve chilled and enjoy.

Tip: If you are not a fan of the strong bite of ginger, start with 1 teaspoon and add more as you desire. I love ginger and can never get enough.
